Matcha 抹茶, pronounced 'maa-cha' is finely grounded powder from green tea leaves (tencha). It has been a common ingredient used across Asia in confectionery and beverages. It originated in China in the Tang Dynasty before it made its way to Japan where the harvesting, processing were perfected before becoming a crucial part in tea ceremonies.

Ceremonial grade matcha is the highest quality, made from the youngest tea leaves with the stems and veins removed. Culinary grade is intended for cooking and has a stronger, slightly more bitter flavour.

Sift 1–2 teaspoons of matcha into a bowl, add a small amount of hot (not boiling) water around 70–80°C, then whisk in a zig-zag motion until frothy. Top with more hot water or steamed milk.
