Culinary grade is the most practical choice for baking where matcha is a primary ingredient, such as cakes, biscuits, ice cream, or pastry. It has a robust flavour that comes through heat and mixing.
Some colour change is inevitable at high temperatures. Our culinary grade is stone-ground, which produces a finer particle size and a more stable chlorophyll structure than coarser milled alternatives. To preserve as much colour as possible, add the matcha towards the end of the mixing process where you can, and avoid prolonged baking time.
